Gazpacho

A refreshing, cool soup that is full of vegetables. Something healthy that the whole family can enjoy.

Goes Well With: quesadillas, garden salad

Ingredients

  • 1 can chopped tomatoes
  • 1 green bell pepper
  • 1 red bell pepper
  • 1/4 red onion
  • 1 English cucumber
  • 1/2 teaspoon Italian parsley
  • 1/4 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 3 cups tomato juice
  • 1 tablespoon lime juice
  • 1 teaspoon black pepper
  • 1/2 teaspoon kosher salt

Directions

  1. Roughly chop all vegetables and put in a food processor with the blade attachment.
  2. Pulse vegetables until combined making sure not to over process. Place mixture into a large bowl and add olive oil, vinegar, tomato juice, lime juice, salt and pepper.
  3. Mix well and place in the refrigerator to chill.
  4. Note: The longer the soup chills, the more the flavors will merry together.
  5. Serve cold or at room temperature.
