Garlic Roasted Red Potatoes

Ingredients

  • 1 lb Baby red potatoes, scrubbed clean
  • 2 Tbsp. Extra virgin olive oil
  • 2 Tbsp. Butter, melted
  • 12 x Garlic cloves, peeled
  • 6 sprg fresh rosemary Salt & pepper, to taste

Directions

  1. First, bring a large pot of salted water to a boil and par boil the potatoes until just tender, about 10 min. Drain the potatoes well and place them a large mixing bowl. Add in the oil, butter, garlic, rosemary and salt and pepper and toss to combine. Place the mix in a shallow roasting pan. Bake at 350 for 30-40 min, tossing often, till golden brown.
  2. Serves 4.
