Garlic Roasted New Potato Salad Recipe

Ingredients

  • Five pounds small red new potatoes Six cloves fresh garlic, cleaned and finely diced
  • 1 x and one-half c. minced red bell pepper
  • 2 c. mayonnaise, preferably Hellman's brand
  • 1 x and one-half c. lowfat sour cream
  • 3 Tbsp. chopped parsley
  • 1 x half c. minced scallions
  • 1 tsp sea salt
  • 1 x pepper to taste

Directions

  1. Wash the red potatoes. Bring to a boil in salted water till tender, about 15 min.
  2. Cold, then cut into one-inch chunks.
  3. In a large bowl, combine mayonnaise, lowfat sour cream, garlic, parsley, scallions, red pepper. Mix well.
  4. This dressing should be smooth. Gently mix in the potatoes.
  5. Season with the salt and pepper to taste.
  6. Chill for 60 min before serving.
