Ingredients

  • 2 Tbsp. extra virgin extra virgin olive oil
  • 6 x garlic, cloves, chopped
  • 1 lb large shrimp, peeled, and, deveined
  • 1 Tbsp. smoked paprika
  • 1/3 c. white wine
  • 2 tsp tomato paste
  • 1/4 tsp salt
  • 2 Tbsp. minced fresh parsley, or possibly, coriander

Directions

  1. In skillet, heat extra virgin olive oil over medium heat; wok garlic till softened but not browned, about 2 min. Add in shrimp and paprika; cook, stirring, till shrimp are well coated and beginning to turn pink, about 2 min. Stir in white wine, tomato paste and salt; increase heat to high. Cook till liquid coats shrimp, about 2 min. Stir in parsley. Serve with toothpicks for skewering shrimp.
