%20And%20in%20between%20her%20rush,%20was%20this%20pesky%20photographer%20who%20instead%20of%20helping%20her,%20was%20busy%20taking%20her%20snaps...Lol!%3C/p%3E%3Cp%3EAnyways,%20I'm%20going%20to%20give%20it%20a%20fancy%20name%20and%20call%20it%20a%20%22Garden%20Veggie%20Frittata%22,%20coz%20that's%20what%20it%20really%20is,%20but%20we%20just%20call%20it%20Omlettes%20at%20home.%20This%20is%20how%20mummy%20loves%20to%20make%20her%20omlettes%20and%20it%20always%20includes%20red%20onions,%20tomatoes,%20thinly%20sliced%20ginger,%20green%20chillies%20and%20cilantro,%20sometimes%20even%20grated%20carrots,%20basil%20or%20mint%20(the%20tomatoes,%20cilantro,%20basil%20or%20mint%20actually%20taken%20from%20our%20garden%20itself)%20%20and%20she%20has%20no%20specific%20measurements,%20just%20a%20spoonful%20of%20this%20or%20a%20half/quarter%20of%20that%20or%20a%20handful%20of%20herbs%20etc.%20So%20just%20as%20colorful%20as%20it%20looks,%20it%20is%20healthy%20and%20flavorful%20and%20the%20frittata%20always%20turns%20out%20so%20juicy!%3C/p%3E%3Cp%3EHer%20process%20is%20simple.%20Slice%20all%20the%20veggies%20thinly%20(she%20uses%20a%20finger%20glove%20and%20slices%20them%20on%20her%20fingers%20(ya,%20that's%20an%20art%20that%20even%20I%20don't%20know)),%20crack%20open%20the%20eggs%20in%20a%20bowl%20and%20whisk%20them%20gently,%20add%20the%20veggies,%20season%20with%20salt%20n%20pepper%20and%20pour%20away%20into%20a%20pan%20lightly%20coated%20with%20canola%20or%20olive%20oil.%3C/p%3E%3Cp%3EShe%20has%20her%20'I'm%20busy%20at%20work'%20face%20there%20and%20usually%20feels%20cold%20early%20in%20the%20mornings%20so%20wears%20a%20light%20sweater%20and%20after%20seeing%20this%20post%20with%20her%20pic%20in%20it,%20she%20might%20not%20talk%20to%20me%20:-P%20She%20hates%20it%20when%20I%20take%20her%20'not%20dressed%20up%20for%20pics'%20pics%20and%20even%20worse%20put%20it%20out%20here%20on%20the%20blog%20for%20the%20whole%20world%20to%20see...But%20she%20is%20my%20mom%20and%20I%20love%20her%20to%20bits%20no%20matter%20how%20she%20thinks%20she%20looks%20:-)%20(And%20i'm%20sooo%20exaggerating%20when%20I%20say%20the%20whole%20world%20reads%20my%20blog...ha!)%3C/p%3E%3Cp%3EAnd%20I%20love%20this%20phrase,%20it's%20so%20simple%20and%20yet%20so%20apt!%3C/p%3E%3Cp%3E%22God%20couldn't%20be%20everywhere%20so%20he%20created%20Mothers%22%3C/p%3E%3Cp%3EEnjoy%20this%20colorful%20and%20beautiful%20breakfast%20frittata/omlette%20with%20few%20slices%20of%20toast%20and%20coffee%20or%20tea%20or%20just%20as%20it%20is%20(if%20you%20are%20on%20a%20carb%20free%20diet%20or%20something).%20%20It%20was%20one%20of%20my%20favorite%20breakfast%20items%20and%20was%20so%20filling%20that%20I%20din't%20have%20to%20even%20think%20of%20a%20mid-morning%20snack%20as%20it%20kept%20me%20full%20until%20lunctime!%3C/p%3E%3Cp%3EThis%3C/p%3E%3Cp%3Erecipe%20is%20for%20a%20single%20serving.%20Increase%3C/p%3E%3Cp%3Ethe%20quantity%20for%20serving%20more%20people%20per%20frittata/omelette.%3C/p%3E%3Cp%3EEggs%3C/p%3E%3Cp%3E%E2%80%93%201%20or%202%20(whisked%20well)%3C/p%3E%3Cp%3EDiced%3C/p%3E%3Cp%3ERed%20Onions%20%E2%80%93%201%20tblsp%3C/p%3E%3Cp%3EThinly%3C/p%3E%3Cp%3Epepper%20to%20taste.%3C/p%3E%3Cp%3E2.%3C/p%3E%3Cp%3EHeat%20a%20frying%20pan%20and%20spray%20oil%20enough%20to%20coat%20the%20entire%20pan.%20If%20using%20butter,%3C/p%3E%3Cp%3Emelt%20the%20butter%20in%20the%20pan%20and%20brush%20it%20on%20all%20sides%20of%20the%20pan.%3C/p%3E%3Cp%3E3.%3C/p%3E%3Cp%3EGently%20pour%20in%20the%20egg-veggies%20mixture%20,%20spread%20it%20to%20out%20to%20desired%20thickness%3C/p%3E%3Cp%3Eand%20cover%20the%20pan%20and%20let%20it%20cook%20on%20medium%20heat.%20(This%20helps%20in%20retaining%3C/p%3E%3Cp%3Emoisture%20and%20also%20puffs%20up%20the%20frittata)%3C/p%3E%3Cp%3E4.%3C/p%3E%3Cp%3ESlowly%20but%20gently%20turn%20the%20frittata%20and%20let%20it%20cook%20on%20the%20other%20side%20as%20well%3C/p%3E%3Cp%3Efor%20another%202%20mins.%20%20Best%20when%20eaten%20hot%20%20:-)%3C/p%3E%3Cp%3E(Mummy%3C/p%3E%3Cp%3Eused%20to%20make%20two%20servings%20of%20this%20recipe%20for%20Manish%20and%20Me%20before%20we%20head%20out%3C/p%3E%3Cp%3Efor%20work)%3C/p%3E%3Cp%3ENote:%20%20You%20can%20add%20or%20decrease%20the%20amount%20of%20veggies%20you%20want%20in%20each%20individual%20frittata.%3C/p%3E%3Cp%3EThis%20is%20homestyle%20comfort%20food%20at%20it%20best!%20The%20best%20thing%20is%3C/p%3E%3Cp%3Ethat%20you%20can%20add%20any%20preferred%20veggie%20of%20choice%20and%20still%20enjoy%20it%20whole%3C/p%3E%3Cp%3Eheartedly.%20%20Remember%20my%20Red%20%20Radish%20Omlette?%3C/p%3E%3Cp%3ECare%20to%20%20indulge%3C/p%3E%3Cp%3Efurther?%20Go%20ahead,%20add%20some%20grated%20cheese%20into%20it%20as%20well%E2%80%A6yummm%20and%20it%20still%20doesn't%20get%20too%20calorific..%E2%80%A6teeheee!%3C/p%3E%3Cp%3ESo%20who%20want%E2%80%99s%3C/p%3E%3Cp%3Eto%20guess%20what%20I%E2%80%99m%20having%20for%20breakfast%20tomorrow?%20Care%20to%20join%20us?%20;-)%3C/p%3E%3Cp%3EOther%20Frittata/Omelette%20Recipes:%3C/p%3E){kind=link}
