Ingredients

  • 1/2 c. sliced carrots
  • 1/4 C. diced onion
  • 2 minced garlic cloves
  • 3C. fat free chicken, beef, or vegetable broth
  • 1 c. diced green cabbage
  • 1 C. chopped spinach
  • 1 Tbsp. tomato paste
  • 1/2 tsp dried basil
  • 1/4 tsp dried oregano
  • 1/4 tsp salt
  • 1 C. diced zucchini

Directions

  1. spray a large saucepan with nonstick cooking spray, heat. Saute the carrot, onion, and garlic over low heat until softened, about 5 min. Add broth, cabbage, spinach, tomato paste , basil, oregano, and salt; bring to a boil. Reduce heat; simmer, overed, about 15 min. Stir in the zucchini, and cook 3-4 min more. Serve hot. 1 cup per serving.
