%20and%20stuffed%20with%20seafood,%20meat%20or%20even%20a%20mixture%20of%20vegetables%20called%20%22zaragallada%22.%20It%20is%20a%20part%20of%20Galician%20identity%20though%20it%20is%20baked%20all%20over%20Spain.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EPreparation:%3C/p%3E%3Cp%3EDissolve%20yeast%20and%20sugar%20into%20100ml%20water%20mix%20well%20and%20let%20it%20stand%20until%20frothy.%3C/p%3E%3Cp%3EIn%20a%20big%20bowl,%20sift%20flour%20and%20salt%20together.%20Make%20a%20well%20and%20add%20in%20the%20ueast%20mix,%201%20tbsp%20of%20oil%20and%20remaining%20water%20a%20little%20at%20a%20%20time%20until%20we%20get%20a%20little%20sticky%20but%20elastic%20dough%20(dough%20starts%20to%20get%20sticky%20and%20is%20moist%20but%20not%20wet)%3C/p%3E%3Cp%3ETurn%20dough%20onto%20a%20lightly%20floured%20surface.%20Knead%20gently%20and%20increse%20the%20kneading%20to%20get%20a%20smooth%20and%20elastic%20dough.%20let%20it%20rest%20halfway%20through%20and%20then%20knead%20faster.%3C/p%3E%3Cp%3EI%20unknowingly%20added%20all%20the%20water%20and%20ended%20up%20with%20a%20sticky%20dough.%20I%20had%20to%20add%20another%206-8%20tbsp%20of%20flour%20to%20get%20a%20smooth%20and%20elastic%20dough.%20Make%20sure%20you%20add%20remaining%20water%20in%20tablespoons%20only%20if%20needed.%3C/p%3E%3Cp%3EForm%20a%20ball%20and%20place%20in%20a%20floured%20bowl,%20cover%20with%20a%20wrap%20and%20let%20it%20ferment%20for%2030%20to%2045%20minutes%20or%20until%20doubled%20in%20size.%3C/p%3E%3Cp%3EMeanwhile%20keep%20the%20filling%20ready.%20You%20can%20make%20the%20zaragallada%20filling%20previous%20night%20and%20drain%20out%20the%20liquid%20overnight.%20I%20had%20prepared%20the%20filling%20in%20the%20morning%20and%20made%20sure%20it%20was%20dry.%20I%20just%20sauteed%20veggies%20adding%20curry%20powder.%3C/p%3E%3Cp%3EWhen%20ready,%20gently%20deflate%20the%20dough-%20mine%20was%20sticky%20-,%20turn%20onto%20a%20floured%20counter,%20divide%20into%20half%20and%20%20roll%20out%20each%20piece%20into%20a%20long%20rectangle%20within%20butter%20paper%20or%20transparent%20sheets%20sprinkled%20with%20flour-%20as%20it%20might%20get%20stuck%20to%20the%20paper%20or%20sheet.%3C/p%3E%3Cp%3EYou%20can%20roll%20out%20as%20thin%20as%20possible%20and%20if%20the%20dough%20shrinks%20while%20rolling%20out,%20rest%20it%20for%2010%20minutes%20or%20so%20before%20continuing%20the%20process.%3C/p%3E%3Cp%3ECarefully%20transfer%20one%20rectangle%20onto%20the%20baking%20dish%20or%20tray.%20You%20can%20go%20for%20any%20shape%20though%20its%20traditionally%20rectangular.%3C/p%3E%3Cp%3EOnce%20a%20dough%20rectangle%20is%20on%20the%20baking%20sheet,%20fill%20it%20up%20with%20the%20filling%20prepared%20leaving%20an%20inch%20at%20the%20edges.%20Cover%20it%20with%20the%20other%20rectangle%20and%20seal%20the%20edges.%20You%20can%20use%20your%20fingers%20or%20even%20fork%20tines%20to%20seal%20the%20edges.You%20can%20nicely%20shape%20the%20rectangle%20or%20circle%20and%20decorate%20it%20with%20leftover%20dough%20pieces.%20You%20can%20go%20for%20smaller%20portions%20and%20even%20crescent%20shape.%3C/p%3E%3Cp%3EThe%20dough%20is%20not%20good%20in%20freezing%20and%20its%20better%20to%20use%20it%20up.%3C/p%3E%3Cp%3EOnce%20the%20empanada%20is%20ready%20brush%20it%20with%20egg%20wash(I%20went%20for%20milk%20)%20%20and%20bake%20it%20in%20a%20preheated%20oven%20at%20350F/180C%20for%2030-35%20minutes%20until%20the%20edges%20are%20brown%20and%20the%20top%20starts%20browning.%3C/p%3E%3Cp%3ETake%20out%20and%20serve%20warm%20or%20at%20room%20temperature%20when%20it%20tastes%20best.%3C/p%3E%3Cp%3EThe%20bread%20turned%20out%20excellent%20and%20was%20filling.%20You%20can%20experiment%20with%20different%20fillings%20and%20turn%20it%20out%20differently%20each%20time.%20You%20can%20even%20use%20half%20wheat%20flour%20and%20make%20it%20more%20healthy.%3C/p%3E%3Cp%3ELets%20see%20how%20others%20made%20their%20empanadas!.%20Hop%20over%20to%20Swathi's%20post.%3C/p%3E){kind=link}
