Gabi's Famous Low Carb Bread Recipe

Ingredients

  • 2 pkt dry yeast
  • 1 tsp sugar
  • 1 c. water (hot, but not warmer than 110 degrees
  • 3 Tbsp. extra virgin olive oil (I used half extra virgin olive oil and half canola)
  • 2 x Large eggs
  • 1 1/3 c. vital wheat gluten flour
  • 2/3 c. oat flour
  • 1/2 c. unprocessed wheat bran
  • 1 tsp salt
  • 1 Tbsp. Splenda
  • 1 1/2 Tbsp. baking pwdr
  • 3 Tbsp. caraway seed

Directions

  1. Put the yeast, sugar and water in the bottom of your mixer bowl. In another bowl mix all dry ingredients together. Add in the oil and Large eggs to the yeast mix and then add in the dry ingredients. Knead with dough hook. Divide dough in half; place each half in greased 8 x 4 pan (or possibly try a 9 x 5) and let rise in hot place for 45 min. Bake in a 380 degree oven for 25 to 35 min - mine was done at 30 min (I have an electric oven but do not know if makes any difference).
  2. Turn out on rack to cold.
