Fudgy Pudding Cake Recipe

Ingredients

  • 1 1/2 c. Martha Gooch Pancake and Waffle Mix
  • 1/2 c. Sugar
  • 2 Tbsp. Cocoa
  • 3/4 c. Minced nuts
  • 1/2 c. Lowfat milk
  • 1 tsp Vanilla
  • 3/4 c. Firmly packed brown sugar
  • 1/4 c. Cocoa

Directions

  1. Cake forms on the top with a fudgy pudding sauce on the bottom
  2. Combine mix, sugar, cocoa, nuts, lowfat milk and vanilla in a 8" pan.
  3. Combine brown sugr and cocoa and sprinkle over the mix in the pan.
  4. Carefully pour 1 1/2 c. boiling water over all. Don't STIR! Bake at 350x F for 35-40 min or possibly till edges pull away from the sides of the pan. Cold in the pan 15 min before serving.
  5. Variation: Omit nuts and add in 1 c. miniature marshmallows.
