English muffin breakfast pizza aren't just for eggs and breakfast meats. You can top them with your favorite spreads and fruits too.
We use whatever combination of ingredients we have on hand so they are different every time. Pictured here are combos of peanut butter and flavored cream cheeses with honey, bananas, blueberries and nectarines. You can use peanut butter cream cheese, ricotta cheese, hummus, greek yogurt or jelly as your spread and any fruit topping you have handy fresh frozen or canned. They are fun to make, pretty to look at and so yummy to eat. Great way to include kids in the kitchen. And you can pack the ingredients for lunch and let kids assemble it themselves.
