Ingredients

  • 1/2 c. 1% milkfat cottage cheese, small curd
  • 1/4 c. diet butter
  • 1 c. whole wheat flour
  • 1/2 c. quick-cooking rolled oats
  • 1 teaspoon grated lemon peel
  • 1 (1.1 ounce) pkg. sugar free instant vanilla pudding
  • 2 c. skim lowfat milk
  • 1 banana, sliced
  • 1 (8 ounce) can pineapple slices, liquid removed
  • 1 (16 ounce) can tart cherries, liquid removed
  • 1 can peach slices, liquid removed
  • 1/2 c. reduced calorie strawberry jam
  • Lite whipped topping (optional)

Directions

  1. In a small bowl, put together cottage cheese and butter till smooth. In a large bowl or possibly food processor, put together flour, oats, lemon peel and salt. Add in cottage cheese mix to dry mix and blend well. Press evenly into a greased 12-inch pizza pan, forming a 1/2 inch rim. Bake at 400 degrees for 15-20 min. Cool.Prepare pudding mix according to package directions, using the 2 cups skim lowfat milk and refrigerate. Spread pudding in prepared crust. Arrange fruit on top of pudding. Heat jam till melted. Drizzle over fruit and refrigerate. Serve with lite whipped topping, if you like. Yields: 16 servings. 182 calories each.
