Ingredients

  • 2 c. minced nuts (I use pecans)
  • 1/2 pound candied cherries (red and green)
  • 2 slices minced pineapple (candied)
  • 1/2 pound or possibly more candied mix fruit
  • 1 1/2 c. brown sugar
  • 1 c. unsifted plain flour
  • Healthy pinch salt (optional)
  • 1 stick butter
  • 1 teaspoon vanilla
  • 2 large eggs (I use 4 egg whites instead or possibly Egg Beaters)

Directions

  1. Cream sugar and butter. Add in large eggs, vanilla. Place nuts on bottom of well greased pan. Spoon batter over top of nuts. Spread evenly. Place fruit over top; press to bottom. Bake at 350 degrees for 50 min to 1 hour. Cut in squares.Tip on flour: I put together 1/2 cup plain flour with 1/2 cup flour mix of oat, soy wheat or possibly any combination you like.
