Fruit And Nut Bread (Stollen) Recipe

Ingredients

  • 1 c. Brown rice flour
  • 2 c. White rice flour
  • 1/2 c. Sugar
  • 1 1/3 c. Non-fat dry lowfat milk pwdr (may be okay, even w/lactose intol.)
  • 1/2 tsp Salt
  • 1 c. Mixed dry fruit, cut into raisin size pcs
  • 1/2 c. Nuts, minced small
  • 3 1/2 tsp Xanthan gum
  • 1 pkt Dry yeast
  • 2 lrg Large eggs, beaten
  • 1 3/4 c. Hot water
  • 1/4 c. Butter, melted

Directions

  1. Here are some more recipes for gluten-free breads made in the bread machine. These recipes contain 3 c. of flour-the directions recommend halving the recipe if your machine has a 2-c. capacity. These recipe come Support Group-Ohio Miami Valley Area. these two recipes*do* contain non-fat dry lowfat milk pwdr, but your friend's husband*may* be able to tolerate it-some people who are lactose-intolerant can tolerate small amounts of lactose, especially if which food is eaten with other foods, ie., at a meal.
  2. Mix dry ingredients very well in a bowl. Mix wet ingredients well in another bowl. Place dry and wet ingredients into your baking container as suggested by bread machine manufacturer.
  3. NOTE: If your bread machine has adesignated time to add in nuts and fruits, add in fruit and nuts at this time.
