%20%20and%20had%20the%20pleasure%20of%20dining%20in%20the%20concession%20stand%20area,%20I%20bet%20you%20have%20had%20a%20Frito%20Pie.%20%20%20They%20are%20a%20guilty%20comfort%20food%20that%20reminds%20me%20of%20my%20youth.%3C/p%3E%3Cp%3EBack%20in%20the%20day,%20the%20chili%20came%20from%20some%20mom%E2%80%99s%20kitchen,%20not%20from%20an%20industrial%20sized%20can.%20%20%20The%20cheese,%20too,%20was%20freshly%20grated%20and%20was%20not%20a%20liquid,%20day-glo,%20nuclear-colored%20concoction.%3C/p%3E%3Cp%3EThe%20recipe%20was%20simple.%3C/p%3E%3Cp%3ESplit%20the%20side%20of%20a%20Frito%20bag,%20carefully%20pour%20in%20hot%20chili%20(with%20or%20without%20beans%E2%80%94sometimes%20this%20was%20available%20on%20request),%20add%20a%20bit%20of%20grated%20cheese,%20garnish%20with%20chopped%20onions,%20jalapenos,%20or%20pickle%20relish.%20%20%20Tuck%20in%20a%20plastic%20spoon%20and%20present%20to%20your%20concession%20stand%20patron.%3C/p%3E%3Cp%3EI%20was%20unaware%20that%20Frito%20Pies%20were%20a%20regional%20favorite%20until%20we%20visited%20Santa%20Fe%20a%20few%20years%20ago.%20%20Apparently%20Oprah%20had%20just%20made%20a%20big%20visit%20and%20had%20made%20a%20HUGE%20fuss%20over%20%E2%80%9Cdiscovering%E2%80%9D%20Frito%20Pies.%20%20%20Who%20knew?%20%20%20I%20thought%20everyone%20knew%20about%20them.%3C/p%3E%3Cp%3E(I%20would%20assume%20that%20most%20everyone%20is%20aware%20now%20because%20I%20think%20they%20made%20her%20favorite%20list%20or%20something.)%3C/p%3E%3Cp%3EI%20had%20been%20planning%20this%20post%20since%20this%20Oprah%20discovery,%20but%20it%20had%20fallen%20to%20the%20bottom%20of%20my%20saved%20drafts.%3C/p%3E%3Cp%3EThen%20Food%20&%20Think%20ran%20%E2%80%9CFrito%20Pie%20and%20the%20Chip%20Technology%20that%20Changed%20the%20World.%E2%80%9D%3C/p%3E%3Cp%3EAnd,%20let%E2%80%99s%20just%20say%20I%20have%20been%20trying%20not%20to%20ingest%20too%20many%20of%20these%20at%20all%20the%20ballgames%20this%20season.%3C/p%3E%3Cp%3EBoth%20of%20these%20things%20prompted%20me%20to%20revisit%20the%20lowly%20corn%20chip%20and%20I%20was%20re-inspired%20to%20present%20my%20Frito%20Pie%20manuscript%20here.%3C/p%3E%3Cp%3EReally,%20on%20a%20cold%20night%20in%20an%20Oklahoma%20high%20school%20gymnasium,%20what%20could%20be%20better?%3C/p%3E%3Cp%3EYum!%3C/p%3E%3Cp%3EWe%20are%20continuing%20with%20our%202012%20Clean%20Out%20so%20here%20is%20a%20super%20easy%20recipe%20for%20chili.%20%20(The%20hamburger%20came%20from%20the%20freezer%20and%20the%20rest%20of%20the%20ingredients%20came%20from%20the%20pantry.)%3C/p%3E%3Cp%3EWhatever%E2%80%99s%20In%20the%20Pantry%20Chili%3C/p%3E%3Cp%3ECombine%20all%20ingredients%20in%20a%20large%20skillet%20or%20sauce%20pan.%20%20%20%20Stir%20and%20heat%20to%20boiling.%20%20%20Reduce%20heat%20and%20let%20simmer%20for%2030%20minutes.%3C/p%3E%3Cp%3EChili%20spices.%3C/p%3E%3Cp%3EThis%20is%20a%20great%20chili%20for%20impromptu%20Frito%20Pies.%3C/p%3E){kind=link}
