This easy prep salad is on several sites, so I don't know to whom to attribute it, but it's good.
Ingredients
- 2 cans sweet corn, drained (14-15 oz.)
- 1 bell pepper, finely chopped (I like red bell)
- 1 C mayo
- 1 C shredded cheddar or other cheese
- 1 C chili cheese flavored Fritos, OR 1 C regular Fritos, plus 1/4 tsp. chili powder
- 1 T chopped cilantro
- opt: diced tomatoes
Directions
- Mix all ingredients together and serve at once.
- If you want to prep the salad in advance, only mix in Fritos when ready to serve.
