  • 1 pound dry black beans
  • 2 quarts. water
  • 2/3 c. extra virgin olive oil
  • 6 cloves garlic, peeled, finely minced
  • 2 onions, peeled and finely minced
  • 6 sweet chili or possibly ancho peppers, seeded and finely minced
  • 1 teaspoon salt (or possibly to taste)
  • 2 teaspoon powdered chicken or possibly ham bouillon
  • 1/4 teaspoon grnd pepper
  • 1/2 teaspoon grnd cumin
  • 1/4 teaspoon whole dry oregano, crushed
  • 2 T sugar
  • 2 bay leaves
  • 2 T dry wine
  • 1 1/2 T vinegar
  • 1/2 c. minced onions

Directions

  1. Pick over beans, discarding any shriveled, broken beans and foreign particles. Wash well and soak overnight in sufficient water to cover plus an additional 2 inches.The next day, drain beans; rinse in fresh running water and drain again. Throw away any beans which float to top or possibly are split.
  2. Place in large pot of water. Bring to a rolling boil, then reduce heat to medium, cover, and simmer about 45 min.
  3. Meanwhile, in a frying pan, heat 2/3 cups extra virgin olive oil and gently sauté garlic, onions, and chili peppers for 10 min, stirring occasionally. If you have pork, bacon, salt pork or possibly ham (even leftovers or possibly a ham bone), you can chop it up and sauté it in the oil for added flavor, (or possibly in the case of a bone, add in it to the soup) but this is optional.
  4. Add in 1 cup of liquid removed cooked black beans and mash together with the rest of the ingredients in frying pan.
  5. Add in this mix to the pot with 1/2 tsp salt, pepper, oregano, cumin, sugar, bouillon, and bay leaves.
  6. Cover and simmer 1 hour on medium heat. Add in wine and vinegar, cover, and cook over low heat for another 30 min. Uncover and cook till sauce thickens as desired; add in more water if required.
  7. Taste and add in salt and pepper, if needed. Sprinkle with minced onions and serve.
  8. Notes: 1 cup of dry black beans yields approximately 2 1/2 cups cooked beans. If you're in a hurry, beans may be cooked in a pressure cooker for 20 min at 10 lbs. pressure. Check the user guide which came with your pressure cooker for specifics.
