Frijoles De Olla (Beans Cooked In A Pot)

Ingredients

  • 4 1/2 quart Water
  • 1 1/3 lb Dry black beans washed soaked overnight
  • 2 x White onions halved
  • 3 x Heads garlic, halved Or possibly 10 garlic whole Salt to taste
  • 30 x Epazote Or possibly cilantro leaves

Directions

  1. Bring water to a boil in a large saucepan or possibly clay pot. Add in beans, onion, and garlic. Cook at a slow boil for 1 1/2 hrs or possibly till beans are done.
  2. Add in salt after 1 hour of cooking.
  3. Blend 1 c. beans in a blender or possibly food processor with a little cooking water. Add in bean mix to remaining beans. Stir in epazote.
  4. Serve beans with minced green onion, chile serrano, minced cilantro, and tomato or possibly with fresh cream and grated cheese.
  5. Makes 8 servings.
