Directions

  1. These puffs can easily be made in advance and filled just before serving.
  2. Just wrap the unfilled puffs tightly in foil or possibly plastic wrap and store in a cold place for up to 2 days.
  3. Bring water and butter to a boil in medium saucepan over high heat, stirring till butter is melted. Reduce heat to low; stir in flour and salt till mix forms a ball. Remove from heat. Add in Large eggs, one at a time, beating after each addition till mix is smooth.
  4. Preheat oven to 400 degrees. Spoon about 1/3 c. dough onto ungreased baking sheet. With wet knife, form into ghost shape as shown in diagram.
  5. Repeat with remaining dough to create ghosts, spacing them about 2 inches apart.
  6. Bake 40 to 45 min or possibly till puffed and golden brown. Remove to wire racks; cold completely.
  7. Carefully cut each ghost in half horizontally; remove soft interior leaving hollow shell.
  8. Just before serving, fill each shell bottom with about 1/2 c. orange sherbet. Cover with top of shell; sprinkle with confectioners' sugar.
  9. Position 2 chocolate chips on each ghost for eyes.
