Fried Peppers, Onions And Sausages Recipe

Ingredients

  • 1/4 c. extra virgin olive oil
  • 6 lrg green or possibly red bell peppers cut into strips
  • 2 med onions sliced
  • 3 x garlic cloves chopped
  • 2 Tbsp. red wine vinegar Salt and pepper
  • 2 lb warm Italian sausage

Directions

  1. Heat oil in heavy large skillet over medium heat. Add in peppers, onions, garlic and vinegar and saute/fry 10 min. Cover and cook till tender, about 5 min. Season to taste with salt and pepper. Meanwhile, cook sausages in another heavy large skillet over medium-high heat till brown and cooked through, turning occasionally, about 15 min. Transfer to platter. Surround with peppers.
  2. Serves 4.
