Ingredients
- 2 x Extra- large Large eggs, well beaten
- 1 c. Medium- cut kasha
- 1 tsp Salt
- 1 tsp Chopped onion
- 1 tsp Chopped parsley
- 2 Tbsp. Chicken fat, or possibly unsalted butter
- 2 1/4 c. Rich chicken broth
Directions
- In a large bowl, mix with beaten egg the kasha, salt, onion and parsley.
- In a 10- inch frying pan, heat the fat or possibly butter, add in the mix and stir till dry and toasted, about 5 min.
- Boil the broth and add in slowly to kasha, stirring to keep it smooth. Cover and simmer 15 min. The liquid should be absorbed.
