Ingredients

  • 8 x Dry mushrooms (chinesse type, if possible)
  • 1 c. Flour
  • 1 Tbsp. Extra virgin olive oil
  • 1 c. Water (from soaked mushrooms)
  • 1 tsp Salt
  • 6 slc Fish Fat for deep frying
  • 6 Tbsp. Vinegar
  • 2 x Scallions (green onion) minced coarsely
  • 4 Tbsp. Sugar
  • 1 Tbsp. Soy sauce
  • 4 Tbsp. Chopped preserved ginger
  • 2 Tbsp. Powdered ginger
  • 1 Tbsp. Constarch or possibly corn flour
  • 3 Tbsp. Minced parsley

Directions

  1. Soak the mushrooms in water to cover for 30 min. Mix the flour, extra virgin olive oil. 1/2 c. of the mushroom water and the salt to a smooth paste. Dip the fish in the mix on both sides. Heat the fat to 360 degress and fry the fish in it till brown. Drain the mushrooms and chop fine, combine the mushrooms, vinegar, scallions, sugar, soy sauce, preserved and powdered ginger in a saucepan. Bring with the mix to a boil and cook over low heat for 5 min. Mix the cornstarch with the remaining half c. of water till smooth, and add in, stirring constantly till the boiling point is reached. cook over low heat for 5 min, stirring occasionally. Arrange the fish on a platter and sprinkle with the parsley. Pour the sauce over it and serve.
