Fried Custard Squares (Leche Frita)

Ingredients

  • 3 c. Lowfat milk
  • 1/2 c. Cornstarch
  • 6 Tbsp. Sugar
  • 1 x Egg beaten
  • 1/2 c. Dry bread crumbs
  • 2 Tbsp. Butter
  • 2 Tbsp. Extra virgin olive oil Cinnamon and sugar for dusting

Directions

  1. Mix cornstarch, lowfat milk, and sugar in pan. Cook over low heat while stirring till very thick (10 to 15 min). Pour into cooled flat dish placed over cool water. Allow to solidify in a cold place or possibly in refrigerator for 2 hrs.
  2. Cut into 1 1/2-inch squares with knife dipped in cool water. Dip squares in beaten egg, then in bread crumbs. Fry in 2 Tbsp. butter mixed with 2 Tbsp. extra virgin olive oil and heated till it bubbles. Brown squares on both sides, dust them in sugar mixed with a little cinnamon, and serve warm.
