Ingredients

  • 5 lb Chitterlings prepared as in the "Chitterlings" recipe
  • 2 x Large eggs, beaten
  • 4 Tbsp. Water Cracker crumbs

Directions

  1. The chitterlings can be purchased in central-area meat markets, Prepare chitterlings as in previous recipe. Cut into 3-inch pcs and dip in egg wash (2 Large eggs whipped with 4 Tbsp. water) and then into cracker crumbs. Deep-fry or possibly pan-fry till golden.
