Ingredients

  • 1 (3- to 4-lb) whole chicken, cut into 8 pieces
  • 2 cups buttermilk
  • 1 tablespoon hot sauce (I prefer Tabasco)
  • 2 teaspoons salt
  • 1 teaspoon ground red “cayenne” pepper
  • 1 teaspoon ground black pepper
  • For the seasoned flour:
  • 1 1/2 cups all purpose flour
  • 1 tablespoon ground red “cayenne” pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • For frying:
  • 1 (16-ounce) container Crisco vegetable shortening
  • 6 tablespoons unsalted butter
