Ingredients

  • 3 lb flank steak
  • 2 x bay leaves
  • 1 x carrot cut 3 pcs
  • 1 x tomato cut in half
  • 1/2 Tbsp. cumin
  • 1/2 Tbsp. oregano
  • 1/4 c. extra virgin olive oil
  • 1 lrg Spanish onion julienned
  • 2 Tbsp. minced cilantro
  • 1 1/4 c. lime juice Salt to taste Freshly-grnd black pepper to taste

Directions

  1. To a large pot, add in steak, bay leaves, carrot, tomato, cumin, and oregano and cover with water. Boil the meat till it becomes tender, then remove from the liquid, and shred the meat.
  2. Into a very warm saute/fry pan pour 1/8 c. extra virgin olive oil, then add in the meat, making sure to spread it out proportionately. Flip it over and cook till both sides become crispy.
  3. In a separate pan, add in the remaining oil and cook the onions till caramelized, then fold in the meat, cilantro, and lime juice. Season with salt and pepper, to taste.
  4. This recipe yields 4 servings.
