%20%20;)%3C/p%3E%3Cp%3EThis%20is%20a%20total%20%22fly%20by%20the%20seat%20of%20my%20pants%22%20recipe.%20%20And%20totally%20off%20track%20from%20my%20usual%20%22follow%20the%20recipe%22%20method.%20%20So,%20if%20you%20make%20this,%20I'd%20love%20to%20hear%20your%20thoughts%20and%20any%20tweaks%20you%20may%20have%20tried.%20%20Happy%20cooking!%20%20:)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPrepare%20the%20squash:%3C/p%3E%3Cp%3EBring%20a%20large%20pot%20of%20water%20to%20boiling%20over%20high%20heat.%20%20Place%20the%20squash%20in%20the%20boiling%20water%20for%2010-15%20minutes.%20(if%20it's%20a%20very%20large%20squash,%20you%20may%20need%20to%20go%20longer)%3C/p%3E%3Cp%3EScoop%20out%20the%20seeds%20and%20then%20using%20a%20fork,%20scrape%20at%20the%20flesh%20of%20the%20squash%20to%20create%20the%20spaghetti-like%20strands,%20cover%20to%20keep%20warm%20and%20set%20aside.%3C/p%3E%3Cp%3EFor%20the%20sauce:%3C/p%3E%3Cp%3EHeat%20oil%20in%20a%20dutch%20oven%20over%20moderate%20heat.%20%20Add%20the%20shallots,%20onion,%20garlic,%20celery,%20and%20carrots%20and%20saute%20until%20tender%20and%20a%20little%20browned.%20%20Remove%20from%20pot%20with%20slotted%20spoon.%3C/p%3E%3Cp%3EAdd%20ground%20beef%20to%20the%20pan%20and%20cook%20until%20nicely%20browned%20(should%20take%20around%2015-20%20minutes)%3C/p%3E%3Cp%3EStir%20the%20veggie%20mixture%20back%20in%20with%20the%20meat.%20%20Next,%20add%20your%20sauce,%20bay%20leaf,%20basil%20and%20thyme.%20%20Bring%20to%20a%20boil%20and%20then%20lower%20the%20heat.%20%20Simmer%20uncovered%20for%20an%20hour%20or%20two%20(depending%20on%20your%20time%20constraints)%20%20If%20your%20sauce%20seems%20too%20thick%20for%20your%20liking,%20you%20can%20thin%20it%20with%20a%20little%20red%20wine,%20chicken%20broth%20or%20extra%20sauce.%3C/p%3E%3Cp%3ESeason%20to%20taste%20with%20salt.%3C/p%3E%3Cp%3ESpoon%20reserved%20squash%20into%20bowls.%20%20Top%20with%20sauce%20and%20mozzarella%20cheese.%20%20Dig%20in!%20%20:)%3C/p%3E){kind=link}
