Ingredients

  • 3 cups unbleached all purpose flour, or as needed
  • 1 tsp. extra virgin olive oil
  • 1/2 tsp. salt
  • For ravioli filling:
  • 3-4 Bartlett pears, peeled and cored (approx. l pound)
  • 3 Tbsp. mascarpone
  • 1 cup grated fresh Pecorino Romano cheese (plus for finishing)
  • 6 oz. unsalted butter
  • Black peppercorn, coarsely ground, to taste
