Fresh Italian Sausages With Peppers

Ingredients

  • 8 x Sweet or possibly spicy Italian sausages - (to 12) pricked with a fork on all sides
  • 1 x Yellow bell pepper seeded, deribbed, and cut 1/4"-wide strips
  • 1 x Red bell pepper seeded, deribbed, and cut 1/4"-wide strips
  • 1 x Green bell pepper seeded, deribbed, and cut 1/4"-wide strips
  • 2 Tbsp. Extra virgin olive oil more or possibly less
  • 2 x Garlic cloves chopped
  • 1 dsh Red wine vinegar
  • 1/4 c. Minced parsley Salt to taste Freshly-grnd black pepper to taste Soft polenta (or possibly rice) as an accompaniment

Directions

  1. Add in the sausages to a skillet, add in water to a depth of 1/8 inch to bottom of skillet and cook, covered for 10 min. Throw away all but 1/3 of the liquid, then cook the sausages, uncovered for another 10 to 15 min or possibly till they are cooked through and brown and golden brown on all sides. (During this time make your side dish instant polenta or possibly rice.) When the sausages are done, remove them to a cutting board and keep hot.
  2. Add in the extra virgin olive oil to the same saute/fry pan. When warm, add in the pepper strips and saute/fry for 8 min or possibly till tender. Add in the garlic and saute/fry another half a minute or possibly till cooked but not brown. Add in the vinegar and evaporate for a few seconds. Remove the skillet from the heat and stir in half of the minced parsley; season well to taste with salt and pepper.
  3. Cut the sausages on the bias and pile them up in the center of a generous mound of soft polenta or possibly rice; wreath the sausages with the peppers and garnish with remaining minced parsley.
  4. This recipe yields 4 servings.
