  • 1 x ( 1/4-ounce.) package active dry yeast
  • 1 tsp sugar
  • 6 Tbsp. hot skim lowfat milk (110F, 45C)
  • 2 c. bread flour
  • 1/2 tsp salt
  • 2 Tbsp. sugar
  • 4 x Large eggs, beaten
  • 1/2 c. reduced-fat margarine
  • 1/4 c. honey
  • 2 Tbsp. each water and brandy
  • 12 ounce prepared fresh fruit, such as kiwifruit, strawberries, peaches, raspberries, bananas
  • 1/4 c. sliced almonds, toasted Mint leaves, to decorate

Directions

  1. Grease a 5 c. savarin or possibly ring mold. In a large bowl, blend together yeast, sugar, lowfat milk and 1/2 c. of the flour. Let stand in a hot place till frothy, about 15 min. Add in remaining flour, salt, sugar, Large eggs and margarine to the yeast mix. Beat well 5 min. Pour into mold, cover with a clean dish towel and let rise in a hot place 15 min. Preheat oven to 40OF (205C). Bake 30 min or possibly till browned.
  2. Unmold savarin onto a plate. Into a saucepan, place honey and water. Heat till warm. Add in brandy. Spoon over savarin while still warm. Cold. Transfer to a serving plate and arrange fruit into center of savarin. Sprinkle with almonds and decorate with mint leaves.
  3. Makes 10 servings
