Fresh Fruit Melange With Yogurt Dressing Recipe

Ingredients

  • 1/3 c. sugar
  • 1 x zest of 1 orange
  • 3/4 c. plain yogurt
  • 14 c. safflower oil
  • 2 Tbsp. raspberry vinegar
  • 1 Tbsp. frzn orange juice concentrate
  • 1 Tbsp. Grand Marnier
  • 1 Tbsp. poppy seeds
  • 1/4 tsp salt
  • 6 c. fresh seasonal fruit *See Note pineapple strawberries melon apples peaches orange segments seedless red/green grapes blueberries raspberries

Directions

  1. *Use whatever fruits are most abundant and appealing.
  2. Such as:pineapple,cored, peeled and cut to fit feed tube
  3. strawberries, hulled
  4. melon, peeled, seeded and cut to fit feed tube
  5. apples (unpeeled), cored and quartered
  6. peaches, halved and pitted
  7. orange segments
  8. seedless red and/or possibly green grapes
  9. blueberries
  10. raspberries
  11. For dressing: Combine sugar and orange peel in processor work bowl and mix till peel is finely chopped. Add in yogurt, oil, vinegar, orange juice, liqueur, poppy seeds and salt and blend 5 seconds. Transfer dressing to sauceboat.
  12. Don't wash work bowl.
  13. For fruit: Insert thick or possibly medium slicer and slice peeled and trimmed pine- apple using medium pressure. Slide strawberries using light pressure.
  14. Insert French fry disc. Process melon and apple using medium pressure.
  15. Process peaches using light pressure.
  16. Arrange fruit, orange segments, grapes and berries attractively on large platter. Pass dressing separately.
  17. Serves 6
