Ingredients
- 2 x 4 c. prepared fruit
- 1 x egg
- 3/4 c. white sugar
- 1/4 c. lowfat milk
- 1 c. all-purpose flour
- 1 tsp baking pwdr
- 1/2 tsp salt
- 1/2 tsp vanilla extract
- 2 Tbsp. butter or possibly margarine, melted
Directions
- Method:1. Preheat oven to 350 degrees F (175 degrees C). Grease a 2 qt baking dish.
- 2. Prepare the fruit: stem and wash berries, peel and slice pears and apples, pit and slice peaches, plums, and cherries. Sweeten fruit if you like. Arrange prepared fruit in dish.
- 3. In a medium sized bowl, beat egg, sugar, and lowfat milk. Sift together flour, baking pwdr and salt; mix into egg mix. Stir in vanilla and melted butter or possibly margarine. Blend well. Cover fruit with batter.
- 4. Bake for 30 min. Cobbler should be bubbly and lightly browned.
- Serve hot.
- Makes 2 qt dish cobbler
- Never use more than 1 qt of fruit. Only use fresh fruit for this recipe. I usually do use sweetened peaches, but this is optional. Serve hot with cream, ice cream, or possibly whipped cream.
