%3C/p%3E%3Cp%3E4%20large%20eggs%3C/p%3E%3Cp%3EPlace%20flour%20on%20a%20counter%20top%20and%20make%20a%20well%20in%20the%20center.%20By%20way%20of%20feedback,%20most%20culinary%20experts%20will%20say%20that%20fresh%20pasta%20doesn%E2%80%99t%20like%20a%20cold%20counter%20top%20and%20to%20use%20a%20wood%20surface.%20%20Crack%20eggs%20into%20it%20and%20beat%20eggs%20with%20a%20fork%20until%20smooth.%20Gradually%20draw%20the%20flour%20into%20the%20egg.%20Do%20this%20a%20little%20bit%20at%20a%20time%20until%20everything%20is%20combined.%20Then%20begin%20to%20knead%20the%20dough.%20If%20the%20dough%20feels%20sticky,%20then%20add%20a%20light%20dusting%20of%20flour.%20Knead%20until%20dough%20becomes%20smooth%20and%20elastic.%20Wrap%20dough%20in%20kitchen%20wrap%20and%20let%20it%20rest%20for%20at%20least%2030%20minutes.%20%20Some%20say%20in%20the%20fridge%20while%20my%20Italian%20friend%20says%20to%20let%20it%20sit%20on%20the%20counter%E2%80%A6I%E2%80%99m%20with%20Francesca.%3C/p%3E%3Cp%3EGrab%20your%20pasta%20machine%20and%20have%20the%20setting%20at%20its%20widest.%20Cut%20the%20dough%20into%20half%20or%20quarters.%20Flatten%20out%20with%20the%20palm%20of%20your%20hand.%20Cover%20the%20remaining%20dough%20to%20prevent%20from%20drying%20out.%3C/p%3E%3Cp%3ELightly%20dust%20the%20dough%20and%20roll%20through%20the%20pasta%20machine.%20Fold%20the%20sheet%20of%20dough%20into%20thirds%20(lightly%20dust%20with%20flour,%20if%20needed)%20and%20place%20back%20into%20the%20pasta%20machine%20and%20roll%20the%20dough%20out%20again.%20Again,%20fold%20dough%20into%20thirds,%20click%20the%20machine%20down%20one%20setting,%20and%20roll%20the%20dough%20through.%3C/p%3E%3Cp%3EYou%E2%80%99ll%20notice%20that%20each%20time%20you%20do%20this%20the%20dough%20starts%20to%20feel%20silky%20smooth.%20If%20it%20doesn%E2%80%99t%20feel%20silky%20smooth,%20repeat%20the%20process%20again.%3C/p%3E%3Cp%3EAdjust%20setting%20again,%20one%20click%20down,%20and%20run%20dough%20through.%20This%20is%20where%20I%20stop%20as%20it%E2%80%99s%20the%20right%20thickness%20for%20the%20noodles.%20If%20you%E2%80%99re%20making%20lasagna%20you%20may%20want%20to%20go%20one%20more%20click%20or%20two%20if%20you%E2%80%99re%20making%20ravioli.%3C/p%3E%3Cp%3EUse%20the%20attachments%20that%20came%20with%20your%20pasta%20machine%20and%20choose%20desired%20cut.%3C/p%3E%3Cp%3EIf%20you%20don%E2%80%99t%20own%20a%20pasta%20machine,%20you%20can%20easily%20roll%20out%20dough%20(in%20smaller%20chunks)%20and%20then%20cut%20using%20a%20knife.%20Once%20you%20have%20your%20pasta%20cut,%20toss%20with%20semolina%20flour%20to%20prevent%20from%20sticking%20together.%3C/p%3E%3Cp%3EIn%20a%20large%20frying%20pan,%20melt%20butter%20over%20medium%20heat%20with%20a%20splash%20of%20olive%20oil.%20Add%20onion%20slices%20and%20cook%20until%20soft%20and%20translucent.%20Remove%20sausage%20meat%20from%20casings%20and%20add%20to%20pan.%20Break%20up%20meat%20with%20a%20spoon%20and%20cook%20until%20no%20longer%20pink.%20About%20halfway%20through%20cooking,%20add%20garlic%20slices.%20In%20the%20meantime,%20bring%20a%20large%20pot%20of%20salted%20water%20to%20a%20boil.%20Add%20fresh%20egg%20pasta%20and%20cook%203%20minutes.%20Remove%20pasta%20with%20tongs%20and%20toss%20into%20meat%20sauce%20and%20don%E2%80%99t%20worry%20about%20the%20water%20dripping%20from%20the%20pasta%20%E2%80%93%20it%E2%80%99ll%20add%20to%20the%20sauce.%20%20If%20the%20sauce%20appears%20to%20be%20too%20dry%20add%20one%20or%20two%20tablespoons%20of%20the%20pasta%20water%20and%20a%20knob%20of%20butter.%20Stir%20and%20add%20half%20of%20the%20Parmesan.%20%20Serve%20immediately%20topped%20with%20remaining%20Parmesan%20and%20chopped%20parsley.%3C/p%3E%3Cp%3EThe%20Culinary%20Chase%E2%80%99s%20Note:%20I%20used%20half%20of%20the%20dough%20and%20placed%20in%20the%20freezer%20for%20later%20use.%20%20Enjoy!%3C/p%3E){kind=link}
