Fresh Apple Cake

Moist cake that is great with a cup of coffee or hot tea to start the day on a cold winter morning. I enjoy sharing this cake with friends during Christmas. This cake may also be prepared in two round nine inch cake pans. Topping can go between layers and on top. For garnish use caramel topping and drizzle over top of cake.

Ingredients

  • 2 cups sugar
  • 2 cups plain flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon sale
  • 3/4 cup chopped pecans
  • 3 eggs
  • 2 teaspoons vanilla
  • 1/2 cup oil
  • 4 cups diced apples, with peel

Directions

  1. Mix above ingredients in a large bowl.
  2. Do not use a mixer for this cake.
  3. Bake in a large loaf pan on 350 ' for 45 to 60 minutes.
  4. Cool on rack.
  5. TOPPING
  6. 6 oz. cream cheese
  7. 2 teaspoons vanilla
  8. 2 cups powdered sugar
  9. 1/4 cup milk
  10. Mix together all ingredients.
  11. Frost top of cake.
