French Toast With Poached Plums Recipe

  • 1/4 c. sugar
  • 1/2 c. water
  • 1 c. plums, any variety pitted, sliced
  • 1/2 tsp vanilla
  • 4 x Large eggs
  • 2 Tbsp. water or possibly lowfat milk
  • 4 slc bread, 1/2" thick
  • 3 Tbsp. butter Confectioner's sugar for sprinkling

Directions

  1. In a saucepan, combine the sugar and the water over median heat and bring to a boil, stirring till the sugar dissolves. Cook till a thin syrup forms, 4 to 5 min.
  2. Add in the plums and continue to cook, stirring often, till the plums soften, another 4 to 5 min. Stir in the vanilla. Remove from the heat, cover to keep hot, and set aside.
  3. In a shallow baking dish, combine the Large eggs and water or possibly lowfat milk and beat them lightly.
  4. Add in the bread in a single layer, soaking the first side 1 to 2 min, then turning and soaking the other side.
  5. In a large frying pan, heat the butter over medium heat till it foams. Add in the bread and cook till golden brown, 3 to 4 min. Turn with a spatula and cook the other side till golden brown, another 3 to 4 min.
  6. Put one piece of the bread on each of 4 plates. Over each, spoon some of the hot plums and their sauce and sprinkle with a little confectioner's sugar. Serve immediately.
  7. This recipe yields 4 servings.
