French Style Beef With Wine

Ingredients

  • 6 strips bacon
  • 1 minced onion
  • 1 minced carrot
  • 3 pound lean beef, cut in cubes
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 T flour
  • 3/4 c. red wine
  • 1 T tomato paste
  • 2 cloves garlic, crushed
  • 1/2 teaspoon thyme
  • 1 bay leaf
  • 6 to 8 sm. onions
  • 1 pound mushrooms

Directions

  1. Cut bacon into small pcs and brown. Add in onion and carrot and brown. Add in beef cubes. Sprinkle with sugar and brown on all sides. Add in salt, pepper and flour. Toss lightly. Add in 1/2 cup red wine. Mix tomato paste with remaining 1/4 cup wine and add in. Add in garlic, thyme and bay leaf. Pour into casserole. Bake 3 to 4 hrs at 325 degrees. One half hour before serving, add in onions and mushrooms. Finish cooking and serve.
