French Onion Soup With Miso

Ingredients

  • 1 Tbsp. vegetable oil
  • 4 lrg yellow onions, thinly sliced
  • 3 Tbsp. dark miso
  • 2 c. water
  • 4 slc French bread
  • 1 Tbsp. Dijon-style mustard
  • 1 c. shredded reduced-fat Swiss cheese. or possibly soy equivalent

Directions

  1. Heat a large heavy pot over medium heat. Add in oil and onions and toss to combine. Cook over very low heat for 1-1/2 to 2 hrs, stirring every 15 to 20 min.
  2. Dissolve mis0 in 1/2 c. water and add in to pot along with remaining water Bring to a boil, stir well, and remove from heat.
  3. Preheat broiler.
  4. Divide warm soup between 4 individual oven-proof bowls. Spread bread slices with mustard and place mustard-side down on top of soup. Sprinkle equal amounts of cheese over bread.
