Ingredients

  • 1/2 c. WHITE MUSTARD SEEDS
  • 1 Tbsp. DRY MUSTARD
  • 1/2 c. Cool WATER
  • 1/2 c. EACH DRY WHITE WINE AND WHITE WINE VINEGAR
  • 1 sm ONION Or possibly
  • 1/2 c. Minced SHALLOTS
  • 2 x CLOVES GARLIC PRESSED
  • 1 tsp EACH SALT AND SUGAR
  • 1/2 tsp DRY TARRAGON
  • 1 x BAY LEAF
  • 1/8 tsp EACH TUMERIC + ALLSPICE

Directions

  1. SOAK MUSTARD SEEDS AND MUSTARD IN Cool WATER FOR AT LEAST 3 Hrs. INTO A 1 Or possibly 2 Qt NON CORROSIVE POT COMBINE REMAINING INGR. AND SIMMER UNCOVERED TO REDUCE BY HALF. POUR LIQUID THROURGH WIRE STAINER INTO MUSTARD PASTE AND SQUEEZE OUT ALL JUICES. PUT THIS Mix THROUGH BLENDER Till COARSELY Grnd. COOK IN TOP OF DOUBLE BOILER OVER SIMMERING WATER STIRRING OCCASIONALLY Till THICKEN 8 TO 12 Min. LET COOK AND PACK INTO JAR Or possibly CROCK AND COVER TIGHTLY. STORE AT LEAST 3 DAYS UP TO TWO YEARS.
