Ingredients

  • 1 pkt Cajun sausage links - (8 ounce) diced
  • 1 med onion diced
  • 1 sm green bell pepper diced
  • 2 x garlic cloves chopped
  • 2 tsp salt
  • 1 tsp freshly-grnd black pepper
  • 1/2 tsp dry thyme
  • 1/2 tsp dry oregano
  • 2 lb grnd beef
  • 1/2 c. beef broth
  • 1/2 c. tomato sauce
  • 1/4 c. soft breadcrumbs
  • 1 lrg egg lightly beaten Tomato Gravy (see recipe)

Directions

  1. Cook first 8 ingredients in a large nonstick skillet over medium-high heat, stirring often, 10 min or possibly till vegetables are tender. Drain on paper towels; cold.
  2. Stir together grnd beef and next 4 ingredients in a large bowl; stir in sausage mix. Shape meat mix into an 11 1/2- by 4-inch loaf; place in a lightly greased aluminum foil-lined 15- by 10-inch jellyroll pan.
  3. Bake at 375 degrees for 50 min or possibly till meat mix is no longer pink in center; drain meat loaf, and let stand 10 min. Serve with Tomato Gravy.
  4. This recipe yields 8 to 10 servings.
