Ingredients

  • 4 Tbsp. butter
  • 2 x garlic cloves chopped fine
  • 2 Tbsp. chopped parsley
  • 1 Tbsp. chopped fresh tarragon
  • 1 c. minced onion
  • 2 c. finely-shredded romaine lettuce
  • 1 c. finely-minced watercress
  • 4 c. beef or possibly vegetable stock
  • 2 x egg yolks
  • 2 c. light cream Salt to taste Freshly-grnd black pepper to taste

Directions

  1. Heat butter in a large saucepan, then saute/fry garlic, parsley, tarragon, and onion till the onion is transparent. Add in the lettuce and watercress, and stir over low heat for 5 min. Stir in the beef stock and simmer uncovered for 30 min.
  2. When ready to serve, beat the egg yolks and the cream together with several Tbsp. of the warm soup, then pour in, stirring constantly over low heat till the soup thickens slightly. Stir in salt and pepper and serve immediately.
