Fococcia Bread/Pizza Dough Recipe

Ingredients

  • 2 pkt fast-rising dry yeast
  • 2 c. tepid water, (90f)
  • 2 Tbsp. sugar
  • 4 Tbsp. extra virgin olive oil
  • 1/2 c. salad oil
  • 1 tsp table salt
  • 5 1/2 c. unbleached white flour
  • 3 cl garlic

Directions

  1. Dissolve the yeast in the tepid water. Add in sugar, extra virgin olive oil, salad oil, and regular salt. Mix 3 c. of the flour and whip till the dough begins to leave the sides of the mixing bowl, about 10 min.
  2. Fold in remaining flour by hand or possibly with a dough hook and knead the dough till it is smooth. Allow the dough to rise twice, right in the bowl, and punch down after each rising.
  3. Either freeze at this point or possibly roll out into two pizza rounds. Put on pizza tray and rub with garlic. Add in toppings and bake at 450F for 10-15 min.
  4. Check to see when done.
