Directions

  1. Preheat oven to 300°F.
  2. In a medium size bowl, using a fork, whisk together eggs, Parmesan, pepper, salt, garlic powder, and onion powder. Set aside.
  3. Heat a 12-inch non-stick, ovenproof sauté pan over medium heat. Add butter and oil to the pan and melt. Add both onions and the mushrooms. Sauté a few minutes until onion is translucent.
  4. Add tomatoes, spinach, sausage and jack cheese to the pan and sauté for 2 to 3 minutes more. Pour egg mixture into pan and stir with rubber spatula. Cook for 3 to 4 minutes or until the eggs have set a little, then transfer pan to the oven.
  5. Bake for 25 to 35 minutes, or until the egg is set in the middle.
  6. To make the sauce, combine all ingredients in a small bowl and refrigerate until ready to use.
  7. Remove the pan from oven and cut into 6 servings. Serve immediately with sauce, if desired.
