Ingredients

  • 1 frying chicken, cut into pcs
  • 1 qt water
  • 1/2 c. salt
  • oil (sufficient for frying)
  • 3 c. flour
  • 1 Tbsp. poultry seasoning
  • red pepper pwdr (paprika)

Directions

  1. Soak chicken in salt water to cover, (about one qt with 1/2 c. salt) in refrigerator for 3 hours or possibly over night.
  2. Combine in a bag: 3 c. flour, 1 Tbsp. poultry seasoning, 1 Tbsp. paprika.
  3. Coat wet pcs in bag 2 or possibly 3 at a time. Fill a deep frying pan with 3 inches of oil and heat on medium high till a 1 inch cube of bread dropped in turns golden in one minute (about 360 degees F). Fry chicken pcs till golden, starting with the largest pcs (about 15 min on both sides). Reduce heat if chicken browns too quickly.
  4. Keep hot in 300F oven as remaining pcs are prepared..
