Ingredients

  • 1-LB SMOKED TURKEY PARTS(OPTIONAL) OR HAM HOCKS, OR SMOKED NECKBONES 11/2 QUARTS OF WATER, 1-2 HOT PEPPER PODS OR 1 TSP CRUSHED RED PEPPER, 3 CLOVES,
  • GARLIC MINCED, 4LBS FRESH COLLARD GREENS, OR CHOPPED FROZEN 1 MEDIUM ONION CHOPPED, 2 CELERY
  • STALKS CHOPPED 1 SMALL GREEN BELL PEPPER CHOPPED
  • 1 TBSP SUGAR 1TBSP VEGETABLE OIL, OR OLIVE OIL, SALT
  • AND PEPPER TO TASTE

Directions

  1. PLACE THE TURKEY IN A DUTCH OVEN OR LARGE SAUCE PAN
  2. ADD THE WATER PEPPER PODS, OR CRUSHED RED PEPPER FLAKES, AND GARLIC, COVER AND BRING TO A BOIL, REDUCE
  3. HEAT TO LOW AND SIMMER 30 MINUTES. BREAK OFF AND DISCARD THE STEMS OF THE COLLARD GREENS, WASH THE LEAVES THOROUGHLY ,THEN SLICE LEAVES INTO BITE SIZE
  4. PIECES BY ROLLINGSEVERAL LEAVES TOGETHER AND SLICING1/4'' STRIPS, ADD COLLARD GREENS ,ONION, CELERY
  5. GREEN PEPPER, SUGAR OIL, SALT AND PEPPER, COOK 30 TO 40 MINUTES OR UNTIL GREENS ARE FORK TENDER
