  • 4 x white fish steaks - (5 ounce ea) (e.g. striped bass, halibut or possibly angler fish)
  • 3 Tbsp. extra virgin olive oil
  • 5 Tbsp. extra virgin olive oil Juice of 1/2 lemon
  • 1 Tbsp. minced fresh parsley
  • 2 Tbsp. extra virgin olive oil
  • 4 x garlic cloves chopped
  • 1 1/2 lb tomatoes skinned, minced
  • 4 x anchovy fillets minced Salt to taste Freshly-grnd black pepper to taste
  • 1 Tbsp. minced oregano

Directions

  1. Wash the fish steaks under running cool water and pat dry with paper towels. Put all the marinade ingredients in a bowl and mix well together.
  2. Add in the white fish steaks to the marinade, turning them till they are thoroughly coated and glistening with oil. Cover the bowl and leave in a cold place for at least 1 hour.
  3. Heat the extra virgin olive oil in a large skillet. Remove the fish steaks from marinade and fry gently till they are cooked and golden on both sides, turning the fish once during cooking. Remove the steaks from the skillet and keep them hot.
  4. While the fish steaks are cooking make the tomato sauce. Heat the extra virgin olive oil and saute/fry the garlic till just golden brown. Add in the tomatoes and minced anchovies, and cook over medium heat till the tomatoes are reduced to a thick pulpy consistency. Season to taste with salt a pepper. Pour the sauce over the fish and serve sprinkled with oregano.
  5. This recipe yields 6 servings.
