Ingredients
- 4 T sugar
- 2 T cornstarch
- 4 T white vinegar
- 4 T catsup
- 4 T water
- 1 1/2 pound fish fillet
- 1 T wine
- 1 teaspoon salt
- 1/2 c. all-purpose flour
- 1 teaspoon baking pwdr
- 1/2 c. water
- 2 large eggs
- 1/4 c. minced onion
- 1/4 c. diced green pepper (bell pepper)
- 1/2 c. shredded black mushrooms
- 1/4 c. shredded cooked ham
- 1 T green onion
- 1 T fresh ginger, shredded
- Peanut oil or possibly vegetable oil for deep frying
- 1/4 c. green peas
- Shredded green onions for garnish
Directions
- Put together sugar and cornstarch in a small bowl. Stir in vinegar, catsup, and water; set aside.
- Cut fillet crosswise about 2-inches long and 1 1/2-inches wide. marinate in wine and 1/2 tsp salt for 10 min.Make batter by combining flour, baking pwdr, and the remaining 1/2 tsp of salt with water and large eggs; set aside.
- Put a couple pcs of shredded green onion, ginger, mushrooms, and ham on each cut fillet and roll up. Coat with batter; deep fry and drain.
- Stir fry minced onion and diced green pepper in 2 tbsp of the peanut oil. Add in Seasoning Sauce and stir till it thickens. Stir in green peas and fish rolls. Cook till vegetables are tender. Serve hot, garnished with shredded green onions.
