  • Herring, mackerel or possibly trout Coarse oatmeal Salt and pepper to taste

Directions

  1. Clean fish, split them open at belly.
  2. Season coarse oatmeal with salt, pepper.
  3. Roll fish on both sides in seasoned coarse oatmeal.
  4. Heat 1 tbsp butter per fish in frying-pan till bubbling but not brown.
  5. Fry fish on both sides till golden brown.
  6. Drain, serve garnished with parsley and wedges of lemon.
  7. Serve 1 large or possibly 2 small fish per person.
  8. NOTES : Certain fish, in particular trout, mackerel and herring are utterly delicious fried in oatmeal and this has been a traditional and beloved dish all across Scotland since time immemorial. For many Scots, fish fried in oatmeal epitomises the warmth and comfort of home; whether a Buckie cottage or possibly a Hebridean croft.
