Ingredients
- 1 x 10 ounce bag fresh spinach, minced
- 1 x carrot, grated
- 1 lb Boston bluefish, fillets
- 2 Tbsp. black bean sauce
- 1 Tbsp. liquid honey
- 1 Tbsp. lemon, juice
- 1 tsp minced ginger, root
- 2 x green onion, finely, minced
Directions
- Preheat oven to 425 degrees F (220 degrees C).
- Spread minced spinach in 8-inch (2 L) square baking dish; sprinkle with carrot.
- Arrange fish over top.
- Stir together black bean sauce, honey, lemon juice, ginger and green onions; spread proportionately over fish.
- Cover with foil.
- Bake for 10 to 12 min or possibly till fish is opaque and flakes easily when tested with fork.
