Ingredients

  • 2 x Red tomatoes
  • 2 x Yellow tomatoes
  • 1 Tbsp. Diced shallots
  • 1 tsp Extra virgin extra virgin olive oil Coarse fleur de sel salt to taste White pepper to taste
  • 1 Tbsp. Fresh basil, julienned
  • 1 c. Blanched green beans
  • 1 c. Mesclun greens
  • 1 tsp 100 year old Balsamic vinegar

Directions

  1. Slice the tomatoes 1/2-inch thick and place in a shallow dish. Add in the diced shallots, extra virgin olive oil, salt and pepper. Add in julienne of basil. Marinate for two hrs. Serve chilled with green beans and mesclun greens to garnish. Drizzle on a few drops of the Balsamic and serve.
