Fideo (Cut) Spaghetti and Shrimp Salad

Fideo is a thin spaghetti cut into 3/4-inch pieces used primarily for soups, or if the spaghetti is broken in half or less it is used for certain Mexican dishes. Of course you can break regular thin spaghetti in small pieces yourself for this salad, but using the prepared pasta is so much simpler and ideal. This unique pasta salad with tiny shrimp has a variety of salad add-ins and makes plenty, but double the recipe for a very large group..

Ingredients

  • 1/2 pound Fideo (cut) spaghetti (I used Barilla brand)
  • 2 stalks celery or sufficient to make 3/4 cup finely chopped
  • 1 bunch green onions, green and white sliced
  • 3/4 cup diced red bell pepper
  • 1/3 cup sliced black olives
  • 1/3 cup minced pickles, or capers drained
  • 3 to 4 radishes, chopped
  • 2 cans tiny shrimp, drained (4.25-ounce each)
  • 1/4 cup minced parsley
  • 3/4 cup mayonnaise
  • 2 tablespoons lemon juice, or more to taste
  • Salt and pepper to taste

Directions

  1. Bring 3-4 quarts of water to a boil. Add salt to taste. Add pasta and boil for 6 minutes stirring occasionally.
  2. Drain and rinse in cold water to stop the cooking. Drain well and place in large mixing bowl.
  3. Add bell pepper, olives, pickles or capers and radishes; toss. fold in shrimp and parsley.
  4. In small bowl stir together mayonnaise, lemon juice and salt and pepper.
  5. Fold dressing gently through salad.
  6. Yield: approximately 12-16 servings as a side dish.
