Ingredients

  • 1 1/2 c. Flour
  • 1/4 c. Sugar
  • 2 tsp Baking pwdr
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 1/2 tsp Cinnamon
  • 2 x Egg whites
  • 2 lrg , ripe bananas, well mashed
  • 2/3 c. Skim lowfat milk
  • 1/2 c. Karo light or possibly dark corn syrup

Directions

  1. Spray 12 (2 1/2-inch) muffin c. with cooking spray. In medium bowl combine dry ingredients. In large bowl, beat egg whites lightly. Stir in bananas, lowfat milk and corn syrup. Add in dry ingredients; stir till well blended.
  2. Spoon into prepared muffin c.. Bake in 400 degree F oven 22 to 25 min or possibly till hard to touch. Cold in pan 5 min. Remove; cold on wire rack.
  3. Makes 12 muffins.
